German Pancakes

Ingredients
1 cup milk
3/4 cup flour
3 eggs
1/4 tsp. salt
2 tsp. sugar
butter
cinnamon
superfine sugar
lemon juice (optional)

Directions
Mix milk, flour, eggs, salt and sugar to make batter.

Oil a 10 inch skillet. Add 1/4 to 1/2 cup batter, spread over bottom in a thin layer. Brown on both sides.

Butter and fill with apples, sprinkle with cinnamon and superfine sugar. Fold and sprinkle more cinnamon and superfine sugar on top. Add lemon juice if desired.

Apple Filling

Ingredients
6-7 apples, washed and pared
1 cup water
1 cup sugar

Directions
Core and slice apples thinly. Bring water to a boil, add apples and cover and cook until almost tender. Add sugar and cook until apples are done or transparent. Keep warm until ready to use.
