Green Beans with Toasted Walnuts
Ingredients
2 lbs. green beans, trimmed
2 tbsp. butter
2 tbsp. vegetable oil
salt to taste
pepper to taste
1 cup walnuts, toasted and chopped
2 tbsp. fresh parsley, minced
Directions
Cook the beans in a large pot of boiling water until just tender, about 5 minutes. Drain, then rinse the beans with cold water. Drain well. Set aside.
Melt the butter with the oil in a large heavy skillet over high heat. Add the beans and toss until thoroughly heated, about 4 to 5 minutes. Season to taste with salt and pepper. Add the walnuts and parsley then toss to mix. Makes 6 to 8 servings.
