Hearty Golden Chowder

Ingredients
2 cups boiling water
2 cup chopped potatoes
1/2 cup carrot slices
1/2 cup celery slices
1/4 cup chopped onion
1 tbsp. chopped chives
1 tsp. salt
dash pepper
1/4 cup butter
1/4 cup flour
2 cups milk
2 cups shredded cheddar cheese

Directions
Add boiling water to potatoes, carrots, celery, onion, chives, salt and pepper in a large saucepan. Cover and simmer for 10 minutes. Do not drain.

Make white sauce by heating the butter, flour and milk in a large pot. Add the shredded cheese. Stir until the cheese is melted then add the undrained vegetables. Heat but do not boil. Top with additional chives if desired.
