Almond Roca
Ingredients
1 lb. butter
2 cups sugar
2 tbsp. water
2-1/2 cups finely chopped almonds
2 large milk chocolate bars
Directions
In a sauce pan melt butter, sugar and water. Cook until temperature registers 250 degrees on a candy thermometer. Do not stir while cooking hot mixture. Add 1 cup chopped almonds and cook to 300 degrees. Pour mixture, spreading evenly, on one end of a long piece of foil.
Melt one chocolate bar in a double boiler over hot water. Pour the chocolate over the hot candy and sprinkle with chopped almonds. When completely cool and chocolate is set, turn candy over onto the other half of the foil. Melt remaining chocolate and spread chocolate on the other side, again sprinkling with more chopped almonds. When all the chocolate has hardened, break into pieces.
