Ambrosia Frosted Daisy Cake

Daisy Cake

Ingredients
2-1/4 cups sifted flour
3 tsp. baking powder
1 tsp. salt
1-1/4 cups sugar
1/2 cup shortening
1 cup milk
2 eggs
1 tsp. vanilla

Directions
Sift together the flour, baking powder, salt and sugar into a mixing bowl. Add shortening and milk. Beat with an electric mixer at low speed for 90 seconds. Add eggs and vanilla and beat again for 90 seconds. Pour into well greased and lightly floured 8-inch round baking pans.

Bake at 350 degrees for 30-35 minutes. Cool and frost with Fluffy Ambrosia Frosting.

Fluffy Ambrosia Frosting

Ingredients
3/4 cup sugar
1/4 cup light corn syrup
2 egg whites
1/4 tsp. cream of tartar
1/4 tsp. salt
2 tbsp. water
1 tbsp. grated orange rind
2-3 drops orange food coloring
1 cup flaked coconut

Directions
In the top of a double boiler, combine the sugar, light corn syrup, egg whites, cream of tartar, salt and water. Cook over rapidly boiling water, beating with an electric mixer or rotary beater, until the mixture stands in peaks. Remove from heat. Continue beating until the frosting is thick enough to spread. Fold in the orange rind and orange food coloring.

Frost cake, then cover with flaked coconut.
