American Chili
Ingredients
1 lb. hickory smoked bacon, cut into small pieces
4 lbs. lean ground beef (Black Angus beef recommended)
2 cans (28 oz.) tomatoes
1 can (15 oz.) tomato paste
1 can (15 oz.) tomato sauce
1 can (7 oz.) diced green chilis
2 c. chopped onions
2 c. chopped bell pepper
1 c. minced parsley
2 tsp. coriander
3 cloves garlic, minced
8 tsp. ground cumin
1 tsp. cayenne
1/4 tsp. oregano
1/4 tsp. paprika
2 tsp. salt
1 tsp. pepper
1 tbsp. lemon juice
2 tbsp. chili powder
1/2 c. corn flour
Directions
Brown the bacon pieces in a large skillet then drain and set aside. Brown the ground beef and drain. Put both the cooked bacon and beef into a large stockpot. Stir in the tomatoes, sauce, paste and green chilis. Heat until simmering.
Saute the onions in olive oil until they turn transparent. Add to the stockpot. Repeat with the green peppers.
Stir parsley, coriander, garlic, cumin, cayenne, oregano, paprika, salt, pepper, lemon juice and chili powder into the stockpot. Cook over low heat for 45 minutes, stirring occasionally. Sprinkle with corn flour to thicken. Stir and simmer for 1 to 4 hours.
Garnish with sour cream, plain yogurt, and/or shredded cheddar cheese.
