Apple Cupcakes
Ingredients
1/2 cup shortening
1 cup sugar
1 egg
2 cups flour
1/4 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. vanilla
1/2 cup cold coffee
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 cup walnuts
1 cup chopped winesap apples
Directions
Cream the sugar and shortening together. Mix in the egg. Sift the dry ingredients together and gradually add to the creamed mixture. Add the remaining ingredients and mix until all of the dry ingredients have been moistened.
Pour the batter evenly into 12 paper cupcake cups in a cupcake or muffin pan. Bake at 350 degrees for 30 to 40 minutes. Frost if desired.
