Apple Knobble Cake

Ingredients
3 tbsp. shortening
1 cup sugar
1 egg
1 tsp. vanilla
3 cups pared, diced apples (use firm apples that won't mush)
1 cup flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 to 1/2 tsp. nutmeg
1/2 cup chopped walnuts

Directions
Cream the shortening and sugar together while gradually adding the sugar to the shortening. Add the egg and vanilla and beat well. Mix in the apples. Sift together the flour, baking soda, salt and spices and blend into the batter. Stir in the nuts.

Turn the batter into an ungreased 8 or 9 inch square pan and bake at 350 degrees for 40 to 45 minutes, or until the cake tests done. Serve warm or cold with whipped cream, ice cream or lemon sauce.
