Apple Raisin Muffins

Ingredients
1-1/2 cups apple, peeled and finely chopped
2/3 cups raisins
2-1/3 cups all purpose flour
1 cup sugar
1 tbsp. baking powder
2 tsp. ground cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk
1/3 cup milk
1/3 cup ricotta cheese
3 tbsp. vegetable oil
1 tbsp. vanilla
2 large egg whites
1 large egg

Directions
Combine dry ingredients in a bowl. Stir in apple and raisins. Make a well in the center of the mixture. Combine buttermilk, milk, ricotta cheese, vegetable oil, vanilla, egg whites and egg. Stir well using a whisk. Add to the dry ingredients, stirring just until moist. Spoon batter into muffin cups.

Bake at 400 degrees for 18 minutes. Cool on a wire rack.
