Apple Spice Cake
Ingredients
3 cups all-purpose flour, sifted
1-1/2 cups sugar
1-1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground allspice
1/2 tsp. ground cloves
3/4 cup shortening
1 jar (15 oz.) apple sauce
2 eggs
1 tsp. vanilla
1 cup raisins
1/2 chopped walnuts
Directions
Grease a 10-inch angel cake tube pan. Dust with flour then tap out any excess.
Sift the flour, sugar, baking soda, salt, cinnamon, allspice and cloves into a large mixing bowl. Add the shortening and apple sauce. Beat with an electric mixer at medium speed for about 2 minutes. Add the eggs and vanilla then beat at medium speed for another minute. Stir in the raisins and walnuts and blend well. Pour the batter into the prepared tube pan.
Bake at 350 degrees for 1 hour 10 minutes or until the cake tests done.
Cool the cake in the pan on a wire rack for 10 minutes. Loosen around the edges with a knife and turn the cake out onto a wire rack. Let the cake cool completely. Drizzle lemon glaze over the top and let it run down the sides.
Lemon Glaze
Ingredients
1 cup confectioner's sugar
2 tbsp. lemon juice
Directions
Blend ingredients together until smooth.
