Banana Pudding

4 eggs, slightly beaten
1/2 cup sugar
1/4 tsp. salt
3 cups milk, scalded
1-1/2 tsp. vanilla
3 to 4 dozen vanilla wafers
4 to 5 bananas, sliced
whipped cream (optional)

Combine eggs, sugar and salt in the top of a double boiler over hot water. Slowly stir in milk. Cook and stir constantly until custard coats metal spoon. Remove from heat and set pan in a pan of cold water to cool slightly. Add the vanilla. Spread a layer of wafers in a glass dessert dish. Cover with a layer of bananas, then cover with custard. Repeat layers until bowl is filled and all of the bananas are used, finishing with a custard layer. Arrange more wafers around edge if desired. Chill 2 or 3 hours. Garnish with whipped cream and bananas if desired. Serves 6 to 8.
