Broccoli with Lemon Sauce

Ingredients
2-1/2 to 3 lb. broccoli
salt
2 eggs, separated
2 tbsp. heavy cream
2 tbsp. lemon juice
4 tbsp. butter or margarine
lemon slices (optional)

Directions
Trim the broccoli and wash thoroughly. Split each stalk lengthwise into halves or quarters. Place the broccoli into a large saucepan and add boiling water until the broccoli is almost covered. Add 1 tablespoon of salt. Cook covered for 10 minutes or until the broccoli is tender. Drain, set aside and keep warm.

In the top of a double boiler, beat the egg yolks with the heavy cream and 1/4 tablespoon of salt until thickened and light colored. Gradually beat in the lemon juice. Place over hot, not boiling water, and cook while beating constantly with a wire whisk until the mixture thickens slightly. Remove the double boiler from heat, leaving the top over the hot water. Add butter, 1/2 tablespoon at a time, beating after each addition until the butter is melted. Remove the top from the hot water. In a small bowl, beat the egg whites until soft peaks form. Fold into the yolk mixture.

Arrange broccoli on a serving platter. Top with the sauce and garnish with lemon slices if desired. Serves 6 to 8.
