Broiled Beef Ring

Ingredients
1-1/2 lbs. ground beef
2/3 cup milk
1/2 cup bread crumbs
3 tbsp. chili sauce
1-1/2 tsp. salt
1/4 tsp. pepper
1/2 onion, finely chopped
3 tomatoes, halved
2 large boiled potatoes, sliced 1 inch thick
butter
1 package frozen peas, cooked per package directions
Barbecue Sauce (below)

Directions
Mix together the beef, milk, bread crumbs, chili sauce, salt, pepper and onion. Pack into an oiled ring mold that will hold 5 to 6 cups. Brush potatoes with melted butter, then season with salt and pepper. Unmold meat mixture onto a cold broiler pan. Add potatoes. Place 6 inches under a broiler and broil for 12 minutes. Spread with barbecue sauce, season and add tomatoes. Broil for another 8 minutes. Serve with cooked peas in the center of the ring. Serves 4 to 6.

Barbecue Sauce

Ingredients
1 medium onion, minced
1/2 cup celery, minced
2 tbsp. vegetable oil
2 tbsp. vinegar
1/2 cup water
1 tsp. salt
4 tbsp. lemon juice
2/3 cup catsup
1 tbsp. Worcestershire sauce
1 tsp. mustard
2 tbsp. brown sugar

Directions
Combine all ingredients. Simmer for 15 minutes.
