Butter Pecan Cookies
1 cup butter 1/2 cup brown sugar 2 tbsp. white sugar 1 egg yolk 2 tsp. vanilla 2 cups all-purpose flour 1 cup chopped pecans
Cream butter and sugars until light and fluffy. Add egg yolk and vanilla and beat thoroughly. Add flour and pecans and mix well. Use a teaspoon of dough per cookie. Drop dough on lightly greased cookie sheet and press down with tines of fork.
Bake at 400 degrees for 8 to 10 minutes, or until delicately browned.
