Cafeteria Baking Powder Buttermilk Biscuits

Ingredients
3 cups white pastry flour
4-1/2 tsp. baking powder
1-1/2 tsp. salt
1/2 cup shortening
1/8 tsp. baking soda
1 cup plus 2 tbsp. buttermilk
1/4 cup flour
1 tbsp. egg wash made by beating 1 egg white in a small amount of water

Directions
Sift flour, baking powder and salt together. Add shortening and mix using an electric mixer at low speed until shortening is well broken up. Combine baking soda and buttermilk. Add to flour mixture. Mix until well blended.

Place dough on a floured board. Roll until 3/4 inch thick. Cut with a 2 inch biscuit cutter, dipping in flour before cutting biscuits. Place cut biscuits on a lightly greased baking sheet. Brush tops with egg wash.

Bake at 375 degrees for 15 to 18 minutes. Makes 15 biscuits. Cool and store in a metal can free from air. If freezing, pack in a single layer, also when defrosting. No refreezing.
