Caramel Frosting
3/4 cup brown sugar 2 tbsp. white sugar 1/4 cup water 2 egg whites 1/2 tsp. baking powder 1 tsp. vanilla
Place sugars and water in a saucepan. Stir until dissolved and boil until it spins a long thread or until the temperature reaches 252 degrees. Remove from heat. Add syrup gradually to well beaten egg whites. Add baking powder and vanilla. Beat until the frosting will hold its shape. Spread thickly on cake and garnish top and sides with broken nut meats.
