Cashew Nut Fried Rice

Ingredients
6 cups cooked rice
1/2 head Chinese (Napa) cabbage, shredded
6 green onions, cut in 1/4 inch lengths
8 eggs
1/2 lb. bacon, fried and crumbled
1-1/2 cups cashew nuts
2 slices ginger root
Oil for frying
3 tbsp. sesame oil
3 tbsp. soy sauce
3 tbsp. dry sherry wine
salt, if desired

Directions
Add a little oil to a wok or Dutch oven and scramble the eggs. Mix in all of the other ingredients and stir fry until everything is thoroughly heated. Discard the ginger slices. Serves 10.
