Chicken O'Lay
Ingredients
6 to 8 boneless, skinless chicken breasts
2 lb. block of cheddar cheese, grated
1/2 can evaporated milk
1/2 can Ortega chilies
1/4 onion, chopped
2 cans cream of chicken soup
corn tortillas
Directions
Boil, broil or microwave the chicken breasts until thoroughly cooked. Cut or tear the chicken into bite sized pieces.
Combine evaporated milk, chilies, onion and soup in a medium bowl. Mix until evenly blended.
Line a glass casserole dish with tortillas and place half of the chicken on top of the tortillas. Pour half of the sauce over the chicken, top with half of the grated cheddar cheese. Repeat the layering beginning with the tortillas and ending with the remaining cheese.
Bake uncovered at 375 degrees for 15 to 25 minutes.
