Chocolate Coconut Topping
1/2 cup sugar 1 tbsp. cornstarch 1 egg yolk, well beaten 3/4 cup evaporated milk 1/3 cup water 4 oz. sweet chocolate, broken into pieces 2 tbsp. butter 1 tsp. vanilla 1-1/3 cup flaked coconut 1 cup chopped walnuts
Combine sugar and cornstarch in a medium sized saucepan. Stir in egg yolk, milk, water and chocolate pieces. Bring to a boil over medium heat, stirring constantly. Allow to boil for one minute while still stirring. Remove from heat. Stir in butter, vanilla, coconut and nuts then allow to cool to a consistency that is easy to spread.
