Chocolate Marshmallow Cake

Ingredients
3/4 lb. unsweetened chocolate
3 cups pastry flour
4 tsp. baking powder
1 tsp. vanilla
2 eggs
2 cups sugar
1 cup milk
1/3 cup shortening
1 tsp. salt
1 cup cold coffee

Directions
Melt the unsweetened chocolate in a double boiler. Mix slightly beaten egg yolks with milk, then add to the melted chocolate. Cook and stir in the double boiler until the mixture becomes thick. Allow to cool partially. Add the shortening, then the sugar gradually, and the vanilla. Beat until smooth.

Fold in stiffly beaten egg whites. Add the coffee, then mix with the flour, baking powder and salt.

Bake in two well greased shallow cakes pans at 350 degrees for 35 to 40 minutes. When partially cooled cover with marshmallow icing.

Marshmallow Icing

Ingredients
1-3/4 cup sugar
1/2 cup hot water
2 egg whites, stiffly beaten
1 tsp. vanilla
1-1/2 cups marshmallows, cut in small pieces

Directions
Cook the sugar and water together, stirring until the sugar is dissolved. Boil without stirring until the syrup forms a soft ball in cold water.

Pour the syrup over the stiffly beaten egg whites and beat until well mixed. Add the marshmallow pieces and beat until the mixture holds its shape. Mix in the vanilla.
