Chocolate Mint Dessert

1/2 cup graham cracker crumbs
2 tbsp. butter, melted
1/2 cup sugar
1 envelope plain gelatin
2 tbsp. cornstarch
2 cups milk
3 egg yolks, slightly beaten
3 egg whites
1/4 cup sugar
1/2 cup heavy cream, whipped
1/2 tsp. creme de menthe syrup
2 squares unsweetened chocolate, melted
 

Blend crumbs and butter, reserve 1 tbsp. Spread the rest into a 10x6x1-1/2 baking dish.

Combine butter, sugar and gelatin and add milk. Cook and stir until boiling. Add small amount of hot mixture to egg yolks then return to hot mixture. Cook 1 minute. Cool until partially thickened.

Using an electric mixer beat the egg whites until soft peaks form. Gradually add the 1/4 cup sugar then beat to stiff peaks. Fold into custard, then fold in whipped cream. Remove 1-1/2 cups mixture and add syrup to it. Stir chocolate into remaining mixture.

Spread half of the chocolate mixture over crumbs, cover with mint layer, then remaining chocolate mixture. Top with reserved crumbs. Chill until firm. Serves 6.
