Chocolate Oatmeal Cake
Ingredients
1 cup rolled oats
1-1/2 cups boiling water
1/2 cup shortening
1-1/2 cups sugar
2 eggs
1 cup sifted flour
1/2 cup cocoa
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
Directions
Mix the rolled oats into the boiling water and then allow to cool.
Cream the shortening with the sugar and eggs. Add the oatmeal mixture and mix thoroughly.
Add the flour, cocoa, baking soda, salt and vanilla. Beat until the batter is smooth. Turn the batter into a greased 8x12-inch baking pan.
Bake at 350 degrees for 35 minutes or until the cake tests done. Frost with Coconut Icing (recipe below).
Coconut Icing
Ingredients
1 cup powdered sugar
2 cups coconut
2 tbsp. butter
1/2 cup milk
Directions
Mix the sugar, coconut, butter and milk together. Boil until the mixture is thick, about 6 minutes.
