Cocoa Loaf Cake

Ingredients
2 cups brown sugar
1/2 cup shortening
3 eggs
1/2 cup cocoa
2 cups pastry flour
1/2 cup hot water
1 tbsp. vinegar
1 tsp. baking powder
1-1/2 tsp. vanilla
1 tsp. baking soda
1/2 cup sour milk

Directions
Beat the sugar and shortening together until light and fluffy. Add the eggs and beat again. Pour the hot water on the cocoa, add the baking soda to the sour milk, and combine all the ingredients. Beat well to make a smooth batter. Pour the batter into a well greased loaf pan.

Bake at 350 degrees for about 30 minutes.

Sour Cream Icing

Ingredients
1 cup sugar
1/2 cup brown sugar
1/2 cup sour cream
1/2 tsp. vanilla

Directions
Make the icing by boiling the ingredients (except the vanilla) together, stirring constantly until the boiling-point is reached. Continue cooking until a soft ball is formed when tested in cold water. Allow to cool slightly. Add the vanilla and beat until creamy.

Spread the icing evenly on the cake. Sprinkle with chopped nuts if desired.
