Coconut and Fruit Cocktail Cake
Ingredients
2 cups all purpose flour
1-1/2 cups granulated sugar
1/2 tsp. baking soda
1 tsp. salt
2 eggs, beaten
1 can (1 lb.) fruit cocktail and syrup
1/3 cup packed light brown sugar
1/3 cup flaked coconut
1/3 cup chopped nuts
Directions
Put the flour, granulated sugar, salt and baking soda in a bowl. Add the eggs, fruit cocktail and syrup. Stir lightly until all is mixed and moistened. Pour the batter into a greased 13x9x2-inch baking pan. Sprinkle the top with a mixture of brown sugar, coconut and nuts.
Bake at 350 degrees for 40 minutes.
Sauce
Ingredients
1 cup sugar
1/4 cup butter or margarine
1/2 cup undiluted evaporated milk
Directions
While the cake is baking, heat the margarine, evaporated milk and granulated sugar in a pan until the margarine melts and the sugar dissolves.
Pour the warm sauce over hot cake and serve at once. Serves 12.
