Coconut Eclipses

Ingredients
2 tbsp. butter
1 tsp. vanilla
2 cups powdered sugar
1/2 cup instant nonfat dry milk
2-2/3 cups coconut
3 squares semisweet chocolate

Directions
Melt butter in a sauce pan then add 2 tbsp. water and vanilla. Combine powdered sugar and dry milk then stir into butter mixture 1/2 cup at a time, mixing well after each addition. Blend in coconut. Drop by teaspoonfuls onto a cookie sheet. Let stand until firm, about 15 minutes. Melt chocolate bits over hot but not boiling water. Remove from heat and cool slightly. Dip bottom of each piece in the chocolate, placing upside down to dry.
