Coconut Pecan Filling and Frosting
3/4 cup evaporated milk 1/2 cup firm packed brown sugar 1/2 cup granulated sugar 1/2 cup butter 1 tsp. vanilla 3 egg yolks, slightly beaten 1-1/3 cup flaked coconut 1 cup chopped pecans
Combine evaporated milk, brown sugar, granulated sugar, butter and vanilla. Bring to a full boil stirring constantly. Remove from heat. Quickly stir a small amount into egg yolks, then add the eggs into the hot mixture. Return to a boil stirring constantly. Remove and add coconut and pecans. Cool and beat occasionally. Spread on cool cake layers, tops only.
