Colorvision Cake

Ingredients
1-7/8 cups flour
1-1/4 cups sugar
3 tsp. baking powder
3/4 tsp. salt
1/3 cup butter
3/4 cup milk
1 tsp. vanilla
3 egg whites
3 tbsp. red colored gelatin (cherry, strawberry, etc.)

Directions
Sift the flour, sugar, baking powder and salt together. Add the butter, milk and vanilla. Add the unbeaten egg whites and stir until the mixture is evenly blended. In a separate bowl mix 1/3 cup of the batter with the red gelatin. Add the red gelatin mixture back into the batter and swirl.

Transfer the batter into a loaf pan and bake at 350 degrees for 40 to 45 minutes. Alternately you may use 2 8-inch round cake pans and reduce the baking time to 30 to 35 minutes.

Pink Icing

Ingredients
3 tbsp. red colored gelatin (cherry, strawberry, etc.)
1 egg white
1/2 cup sugar
1/8 tsp. cream of tartar
2 tbsp. water

Directions
Mix all ingredients in the top of a double boiler. Place over boiling water. Beat until the icing holds stiff peaks. Remove from heat and beat for one minute longer.
