Cookie and Strawberry Ice Cream Pie

1 roll slice and bake cookies, flavor of choice
Strawberry preserves, jam or topping
1 pt. vanilla ice cream
1 pt. strawberry ice cream

Slice cookie dough 1/8-inch thick. Line side of a 9-inch pie pan with the cookie slices, overlapping slightly for a pretty scalloped edge. Line bottom of pan with more slices. You will have used 1/2 to 3/4 roll of cookie dough. Bake at 375 degrees for 7 to 9 minutes until lightly browned. The crust will puff up while in the oven but will settle while cooling.

When cool, spread crust with strawberry preserves, jam or topping. Just before serving heap with vanilla and strawberry ice cream. If desired, top with whole fresh strawberries.

Alternative ideas:

  • Spread cookie crust with marshmallow topping and fill with chocolate ice cream.
  • Spread cookie crust with fudge topping and fill with vanilla ice cream.
  • Use a chocolate cookie for the crust, spread with cherry jam and fill with chocolate ice cream.
