Corn Chowder

Ingredients
3 ears fresh corn or 2 cups frozen corn
2 medium size potatoes, peeled and cubed
1 rib celery, minced
1 medium size onion, minced
2 tbsp. butter or margarine
2 cups milk
1-1/4 tsp. salt
1/4 tsp. pepper

Directions
Peel potatoes and cut into cubes. Place cubes in a large pot along with one cup of water. Bring to a boil, then reduce the heat and cover the pot.

Remove the kernels of corn from the cob and set aside. Mince the celery and onion then add to the potatoes. Add the salt to the pot that now contains potato, celery and onion. Cover the pot again and cook for 20 to 25 minutes stirring frequently.

Add the corn, butter, milk and pepper to the pot and cook for another 10 minutes. Measure out two cups and put into a blender. Blend until smooth then return to the pot.

Serve alone or with your favorite sandwich.
