Corn Fritters
Ingredients
3 large eggs, beaten lightly
1-1/4 cups milk
2-1/2 cups flour
5 tsp. baking powder
1/4 cup sugar
1/2 cup butter, melted
1 cup freshly cut corn
Directions
Beat eggs, then add milk, sifted dry ingredients, melted butter and corn. The batter should be thick.
In a deep fat fryer kettle let 3 inches of oil heat to 375 degrees.
Drop batter by tablespoonful into the oil. Cook only 3 fritters at one time. Turn when brown on one side. Drain on paper towels and sprinkle lightly with powdered sugar. Serve hot. Makes 18 to 20 fritters.
