Cream of Asparagus Soup
Ingredients
1-1/2 lb. fresh asparagus, rinsed and bottoms removed
3 cups chicken broth
3 tbsp. butter
3 shallots, peeled and sliced
2 cloves garlic, minced
3 tbsp. flour
1 cup cream
3/4 tsp. thyme
1/4 tsp. pepper
1/3 cup Parmesan cheese
Directions
Cut asparagus into one inch pieces. In a large saucepan, bring the asparagus pieces and chicken broth to a boil. Reduce heat and simmer until the asparagus is tender.
Melt butter in a small skillet, then add the shallots and garlic. Saute until softened. Stir in the flour and cook for another minute. Add to the cooked asparagus and stir until the soup has thickened. Cool slightly.
Transfer to an electric blender and blend until nearly smooth. Return to the saucepan and simmer for 5 minutes. Add the cream, thyme and pepper, then simmer for another 5 minutes. Add Parmesan cheese and continue cooking until the cheese has melted. Serves 6.
