Cream of Potato Soup
Ingredients
1/4 cup butter
1 or 2 medium sized onions, minced
4 medium size potatoes, pared and cubed
1/2 cup water
1 tsp. salt
3 cups milk
1 tsp. celery salt
Directions
Melt the butter in a 3 quart saucepan. Add the minced onion and cook for 3 to 5 minutes. Add the cubed potatoes, 1/2 cup water and salt. Cover and cook for 30 minutes. Add the milk and celery salt and simmer for another 10 minutes.
Serve in soup bowls, tureens or large mugs and garnish with fresh parsley if desired. Variations include adding fresh mushroom slices while browning the minced onion, or you can add ham cubes for a more filling soup. Serves 6 to 8.
