Curried Orange Rice

Ingredients
1/4 cup butter or margarine
1 medium size onion, sliced thin
2 tsp. curry powder
1 cup uncooked rice
1 cup orange juice
1 cup chicken broth
1 tsp. salt
1/2 cup seedless raisins
1 bay leaf

Directions
Melt the butter in a heavy saucepan or flameproof casserole. Saute the onion in the melted butter until soft and golden, but not brown. Stir in the curry powder and rice. Cook two additional minutes while stirring constantly. Add the remaining ingredients and stir with a fork. Bring the mixture to a boil then reduce heat.

Cover and simmer for 15 to 20 minutes, or until the rice is tender and the liquid has been absorbed. Remove the bay leaf before serving. Serves 6.
