Custard
1 quart rich milk 4 eggs 3/4 cup sugar 1/2 tsp. salt 1 tsp. vanilla nutmeg or cinnamon
Scald milk without boiling. Beat eggs lightly, then add sugar and salt. Pour in scalded milk while stirring. Add vanilla. Pour into custard cups or a large glass baking dish. Sprinkle on a bit of nutmeg or cinnamon before baking.
Set in a pan of water and bake at 325 degrees until set. If using a large baking dish, the baking time may be as long as an hour.
