Dipping Fondant
3 cups powdered sugar 1/4 cup water 4 tbsp. white corn syrup
Combine ingredients in the top of a double boiler. Slowly heat to 150 degrees over boiling water, stirring constantly. Remove from heat, add flavoring or food color as desired. Stir 2 minutes.
Holding small cakes on tines of fork, dip them into icing and slide onto a wire rack placed over a baking sheet to catch drips. When icing cools and becomes too thick, place over boiling water for a few minutes.
The icing that drips onto the baking sheet may be scraped up and melted. If it contains crumbs, the rough appearance of cakes may be covered by rolling in finely chopped nuts or coconut before the icing sets.
