Divinity Pastels

Ingredients
3 cups sugar
3/4 cup light corn syrup
3/4 cup water
2 egg whites
1 pkg. (3 oz.) flavored gelatin (any flavor)
1 cup chopped nuts
1 cup fine grated coconut

Directions
Cook sugar, corn syrup and water until it forms a hard ball in cold water.

Beat egg whites until stiff and add gelatin one tablespoon at a time, until the egg white mixture beats into stiff peaks. Pour syrup mixture over egg white mixture, beating constantly. Continue beating until it loses its gloss and holds it shape.

Add nuts and quickly pour into a well greased square pan. Let stand until firm enough to handle, about 10 minutes. Cut into 8 strips, roll in coconut, then cut each strip into 10-12 pieces. Roll each piece again in coconut. Allow to dry for about 2 hours. Store in a covered container. Makes approximately 7 dozen candies.
