Double Chocolate Potato Drop Cookies

1-1/2 cups sifted flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 cup shortening
1 cup brown sugar, packed
1 tsp. vanilla
1 egg
2 squares unsweetened chocolate, melted & cooled
1/2 cup mashed potatoes
1/2 cup chopped nuts
3/4 cup buttermilk

In a large bowl cream the brown sugar, shortening, egg and vanilla. Sift the flour, salt and baking soda together and gradually add to the creamed mixture. Thoroughly mix in the remaining ingredients.

Drop by spoonfuls onto ungreased cookie sheets and bake at 400 degrees for 10 minutes.

Chocolate Icing

1 tbsp. butter
1 square unsweetened chocolate
1 cup powdered sugar, sifted
1-1/2 tbsp. hot water

Make icing by melting butter and chocolate. Mix in powdered sugar and hot water. Ice cookies while still hot.
