Dr. Bird Cake
Ingredients
3 cups sifted flour
1 tsp. baking soda
1 tsp. cinnamon
2 cups sugar
1 tsp. salt
1-1/2 cups cooking oil
1 can (8 oz.) crushed pineapple & juice
1-1/2 tsp. vanilla
3 eggs
2 cups diced banana, very ripe
Directions
Sift together the flour, baking soda, cinnamon, sugar and salt. Add the remaining ingredients and stir to blend evenly but do not beat. Pour the batter into a well greased 9-inch tube pan.
Bake at 350 degrees for 1 hour 20 minutes. Set aside to cool in the pan on a wire rack.
