English Toffee Pie

2 tbsp. cornstarch
6 tbsp. sugar
2 cups milk
4 egg yolks
1 tsp. vanilla

Blend sugar and cornstarch. Mix in a small amount of milk, then stir cornstarch mixture into remaining milk. Beat in egg yolks until smooth. Cook over low heat stirring constantly until thick. Add vanilla. Cover with plastic wrap and cool. Turn into crumb crust and chill.

Crumb Crust

1/2 cup butter
1/2 cup sugar
18 graham crackers, crumbled

To prepare crumb crust combine butter and sugar and cook until bubbly, stirring constantly. Blend with graham cracker crumbs and press into an 8-inch pie tin.
