Fluffy Baked Sweet Potatoes

Ingredients
4-1/2 cups miniature marshmallows, divided
1/2 cup milk
3 eggs, separated
1 can (16 oz.) sweet potatoes, drained, mashed
2 tbsp. butter or margarine, melted
1/2 tsp. ground nutmeg
1/2 tsp. salt

Directions
Preheat oven to 325 degrees.

Melt 2-1/2 cups of the marshmallows with the milk over low heat, stirring until smooth. Stir a small amount of this hot mixture into the egg yolks then return to the hot mixture. Cook, stirring constantly, over low heat for 3 to 5 minutes or until thickened.

Mix the sweet potatoes, butter and seasonings then add to the marshmallow mixture. Fold in stiffly beaten egg whites. Pour into a 1-1/2 quart souffle dish or casserole dish.

Bake for 45 minutes. Remove from the oven and heat broiler. Sprinkle the top of the sweet potato mixture with the remaining 2 cups of marshmallows. Broil until the marshmallows are lightly browned. Makes 4 to 6 servings.

To Make Ahead
Prepare as directed except for baking the dish. Cover and refrigerate overnight. When ready to serve, bake, uncovered, at 325 degrees for 55 to 60 minutes or until thoroughly heated. Remove from the oven and heat broiler. Sprinkle the top with the remaining 2 cups of marshmallows. Broil until the marshmallows are lightly browned.
