Fresh Fruit Cake #1
Ingredients
1/2 cup butter
1-1/2 cups sugar
2 eggs, well beaten
3 cups flour
pinch salt
4 tsp. baking powder
1 cup milk
1 tsp. vanilla
4 cups fresh fruit, drained (rhubarb is excellent)
1 pkg. (3 oz.) strawberry gelatin
Topping
Ingredients
1/4 cup flour
1/2 cup sugar
3 tbsp. butter
Directions
Mix the first 8 ingredients together to make a stiff cake batter. Smooth the batter evenly into a 9x13-inch buttered baking pan.
Combine the drained fruit with the gelatin and stir until evenly mixed. Add two extra tablespoons of sugar to the gelatin if you are using rhubarb. Spread the fruit mixture over the top of the batter.
Combine the topping ingredients together until crumbly. Sprinkle over the top of the fruit mixture.
Bake at 375 degrees for about 50 minutes, or until the top is nicely browned.
