Fruit Cake
Ingredients
1 cup vegetable oil
1-1/2 brown sugar
4 eggs, separated
2 tsp. allspice
2 tsp. cinnamon
1 tsp. ground cloves
2 tsp. salt
1 tsp. baking powder
3 cups flour
1 cup fruit juice
1-1/2 cups candied cherries
1 cup shaved citron
1 cup chopped candied pineapple
1 cup raisins
1 cup chopped figs
3 cups nuts
Directions
Mix the oil, sugar and egg yolks together and beat vigorously for two minutes.
Sift together the spices, salt, baking powder and 2 cups of the flour. Add the flour mixture alternately with the fruit juice to the egg mixture.
Mix the remaining cup of flour with the fruits and nuts. Add the fruit and nuts mixture to the above batter. Beat the egg whites until stiff peaks form and fold gently into the batter.
Transfer the batter into a loaf pan or other appropriate baking pan.
Bake at 275 degrees for approximately 4 hours.
