Fruit Cocktail Cake
Ingredients
1 can fruit cocktail, undrained
1-1/2 cups sugar
2 cups flour, sifted
2 eggs
1 cup raisins
1 cup chopped nuts
1 tsp. salt
2 tsp. baking soda
Directions
Combine all ingredients together and mix well. Transfer batter into a greased tube pan.
Bake at 325 degrees for one hour.
Icing
Ingredients
1 stick margarine
3/4 cup sugar
1/2 cup evaporated milk
1/2 cup flaked coconut or nuts
1 tsp. vanilla
Directions
Boil the margarine, sugar and milk for three minutes in a saucepan. Remove from heat then add the flaked coconut (or nuts) and vanilla. Ice the cake while this icing is hot.
