Fruit Gems
Ingredients
2 cups sifted flour
3 tsp. baking powder
1 tsp. salt
1/4 cup plus 1 tbsp. sugar
1/4 cup butter
1 egg, slightly beaten
3/4 cup milk
1 cup well drained fruit cocktail
1 tsp. grated lemon rind
1/4 tsp. mace
Directions
Sift flour, baking powder, salt and 1/4 cup sugar. Cut in butter until it is in fine particles. Blend slightly egg and milk then add to the flour mixture with fruit cocktail. Stir only until flour mixture is moistened. Turn into buttered muffin tins 2/3 to 3/4 full.
Mix together lemon rind, mace and 1 tbsp. sugar and sprinkle on top of batter.
Bake at 425 degrees for 20 to 25 minutes.
