Fruit Pudding Cake
Ingredients
2 cups sifted flour
1-1/2 cups sugar
2 tsp. baking soda
1/4 tsp. salt
2 eggs, beaten
1 lb. 1 oz. can fruit cocktail
Icing for Fruit Pudding Cake
Directions
Sift together the flour, sugar, soda and salt. Add the eggs and fruit cocktail with its syrup, mixing well. Pour the batter into a greased and floured 8 or 9 inch tube pan.
Bake at 300 degrees for 1 hour. Cool for 10 to 15 minutes then remove the cake from the pan and place on a wire rack. Top the warm cake with Icing for Fruit Pudding Cake or whipped cream.
Icing for Fruit Pudding Cake
Ingredients
1/2 cup butter
1 cup confectioner’s sugar
1/2 cup evaporated milk
1 egg yolk
3 tsp. vanilla
1 cup shredded coconut
1/2 cup chopped dates
Directions
Place the butter, sugar, milk and egg yolks in a heavy pan. Bring to a boil and cook for 2 minutes, stirring constantly. Add the vanilla, coconut and dates, and mix well. Cool slightly and spread on top of the warm cake.
