Gingerbread Banana Shortcake
Ingredients
1-3/4 cups flour
1 tsp. baking powder
1 tsp. ginger
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
3 tbsp. shortening
1/2 cup sugar
1 egg, beaten
1/2 cup molasses
1/2 cup boiling water
bananas, sliced
whipped cream
Directions
Sift together the flour, baking powder, ginger, cinnamon, salt and baking soda. Cream the shortening and sugar together. Add the beaten egg and molasses.
Gradually add the dry ingredients and mix thoroughly. Add boiling water and mix to make a smooth batter. Spread the batter in a shallow baking pan.
Bake in a moderate oven for 25 to 30 minutes. While still warm, cover the cake with bananas and pile with whipped cream.
