Gladys' Pineapple Cake

Ingredients
1-1/2 cup sugar
2 cups flour
2 tsp. baking soda
2 eggs
1 medium can crushed pineapple

Directions
Mix the flour and sugar together. Beat the two eggs well. Add the crushed pineapple to the flour and sugar mixture. Stir in the beaten eggs and baking soda. Mix well. Pour into an ungreased long loaf pan.

Bake at 350 degrees for 30 minutes or until the cake tests done.

Frosting for Pineapple Cake

Ingredients
1-1/2 cup sugar
1 stick margarine
1 small can condensed milk
1 cup chopped pecans
1 cup coconut
1 tsp. vanilla

Directions
Mix all ingredients together in a saucepan and bring to a boil. Boil for about 6 minutes then pour over the cake immediately after it has been taken from the oven.
