Glorified Cheesecake

Ingredients
2 tbsp. gelatin
3 egg yolks, slightly beaten
2 cups cottage cheese or 3 pkgs. cream cheese
juice and grated rind of one lemon
3 egg whites, stiffly beaten
1 cup milk
1/2 tsp. salt
1 cup whipping cream
2/3 cup sugar
1 tsp. vanilla

Directions
Combine the gelatin with 1/4 cup water and allow to stand.

Cook the milk, egg yolks, sugar and salt in a double boiler until the mixture clings to a spoon. Remove from heat and then add the cottage or cream cheese, lemon juice and rind, dissolved gelatin and vanilla. When the mixture starts to set, fold in the beaten egg whites and whipped cream.

Put the mixture into a spring form mold pan that has been lined with a graham cracker crust or the Zwieback Crust below.

Zwieback Crust

Ingredients
1/2 cup melted butter
2 cups Zwieback crumbs, rolled fine
1 tsp. cinnamon
4 tbsp. sugar

Directions
Mix all ingredients together. Put 2/3rds of this mixture in the bottom of a spring form pan. Spread and press evenly so that the crust covers the entire bottom of the pan.

Use the remaining crust mixture to sprinkle over the top of the cheesecake. Allow the cheesecake to set in the refrigerator for a few hours before serving.
