Golden Sesame Loaves

Ingredients
1 package or cake yeast
1-1/2 cups lukewarm water
2 tbsp. nonfat dry milk
2 tbsp. sugar
2 tsp. salt
2 tbsp. melted shortening
4-3/4 cups sifted flour
1 egg white, slightly beaten
2 tsp. water
1 tbsp. sesame seeds, toasted

Directions
Soften yeast in 1/2 cup water. Combine nonfat milk, sugar, salt, remaining water and shortening. Add about 1-1/2 cups flour and beat well. Add softened yeast and mix well. Add enough additional flour to make a moderately stiff dough. Turn out on a lightly floured surface and knead until smooth and satiny, 5 to 8 minutes. Shape into a ball and place in a greased bowl. Grease surface of dough lightly. Cover and let rise in a warm place until doubled, about 1 hour.

Punch down, cover and let rest 10 minutes. Divide into 6 equal portions and shape each into a round ball. Roll each ball to a circle 5 inches across. Place on greased baking sheets at least 2 inches apart. Mix egg white and 2 teaspoons water. Sprinkle evenly with sesame seeds and press down lightly with fingertips. Let rise until doubled, about 45 minutes.

With a lightly floured spatula or table knife, press down lightly across each loaf to make into six equal wedges.

Bake at 400 degrees for 20 to 30 minutes or until golden brown. Makes 6 loaves.

To toast sesame seeds: Place sesame seeds in hot skillet over low heat and stir constantly 2 to 3 minutes or until golden brown.
