Good Luck Soup Bean Jars
In a clear glass quart-size canning jar place in layers a scant half cup of each of the following dry beans:
navy beans
red kidney beans
split peas
black beans
lima beans
lentils
black-eyed peas
pinto beans
Place a canning lid on jar and decorate jar as desired. Attach a decorated card containing the following recipe:

Directions
Empty beans into a bowl and mix well. Wash and cover with water, adding 2 tablespoons of salt. Soak and refrigerate overnight. Drain. Place beans in a large kettle. Add:
4 quarts water
ham or a ham hock
2 large onions (sliced)
Boil slowly for 2-1/2 hours to 3 hours adding hot water if needed. Add:
2 cans (18-3/4 oz.) tomatoes
1 large chopped red bell pepper
1 clove garlic (minced)
juice of one lemon
pinch of ginger
salt and pepper to taste
Simmer until ready to serve. Yield 8 to 10 servings.
